Chef Jimmy Ophorst builds a seasonal tasting menu almost entirely from PRU Jampa, the restaurant's own organic farm, and a handful of small Thai producers. The sea-facing, solar-powered room is built around a Kappo-style counter that looks straight into the open kitchen.
